  • Spinach - 50 grams, fresh
  • Vegetable broth - 250 ml
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - 1 teaspoon
  • Fresh basil - for garnish

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Rinse the quinoa under cold water, then combine it with vegetable broth in a small pot. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until cooked. Fluff with a fork.
  3. While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
