Ingredients
- Pasta (penne or fusilli) - 200 grams
- Boneless, skinless chicken breast - 250 grams
- Large onion - 1 (about 150 grams)
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried oregano - 1/2 teaspoon
- Parmesan cheese (optional) - 30 grams
- Fresh parsley (for garnish) - 1 tablespoon
Steps
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
- While the pasta is cooking, slice the onion thinly and chop the garlic.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 10 minutes.
- Add the chopped garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
- Cut the chicken breast into bite-sized pieces. Push the onions to the side of the skillet, add the chicken, and season with salt, black pepper, and oregano. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through.
- Add the cooked pasta to the skillet, tossing everything together to combine. If desired, sprinkle with grated Parmesan cheese and toss again.
- Serve hot, garnished with fresh parsley.
