Ingredients

  • Pasta (spaghetti or penne) - 200 grams
  • Boneless, skinless chicken breast - 250 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Onion, diced - 1 small
  • Canned crushed tomatoes - 400 grams
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons (for garnish)
  • Grated Parmesan cheese (optional, for serving) - 30 grams

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently to avoid burning.
  4. Cut the chicken breast into bite-sized pieces and season with salt and black pepper. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
  5. Pour in the crushed tomatoes and add the dried oregano and basil. Stir to combine and let the sauce simmer for about 10 minutes, allowing the flavors to meld.
  6. Add the cooked pasta to the skillet and toss to coat the pasta in the sauce. Cook for another 2-3 minutes until heated through.
  7. Serve hot, garnished with chopped parsley and grated Parmesan cheese if desired.
