  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Bell pepper (any color) - 1 medium, diced
  • Chicken broth - 250 milliliters
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a medium pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In another pot, combine the couscous with 250 ml of chicken broth and bring to a simmer. Once simmering, remove from heat, cover, and let it sit for 5 minutes, then fluff with a fork.
  3. While the pasta and couscous are cooking, heat olive oil in a large skillet over medium heat. Add diced onion and bell pepper, sautéing for 3-4 minutes until softened.
  4. Add the minced garlic to the skillet and cook for another minute until fragrant.
  5. Cut the chicken breast into bite-sized pieces, season with dried oregano, salt, and black pepper, then add to the skillet. Cook for 6-8 minutes until the chicken is cooked through and no longer pink.
  6. Combine the cooked pasta and couscous with the chicken and vegetable mixture in the skillet. Toss everything together until well mixed and heated through.
