- Bell pepper (any color) - 1 medium, diced
- Chicken broth - 250 milliliters
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a medium pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- In another pot, combine the couscous with 250 ml of chicken broth and bring to a simmer. Once simmering, remove from heat, cover, and let it sit for 5 minutes, then fluff with a fork.
- While the pasta and couscous are cooking, heat olive oil in a large skillet over medium heat. Add diced onion and bell pepper, sautéing for 3-4 minutes until softened.
- Add the minced garlic to the skillet and cook for another minute until fragrant.
- Cut the chicken breast into bite-sized pieces, season with dried oregano, salt, and black pepper, then add to the skillet. Cook for 6-8 minutes until the chicken is cooked through and no longer pink.
- Combine the cooked pasta and couscous with the chicken and vegetable mixture in the skillet. Toss everything together until well mixed and heated through.
