Ingredients

  • Pasta (penne or fusilli) - 200 grams
  • Chicken breast (boneless, skinless) - 200 grams
  • Bacon (kosher) - 100 grams
  • Olive oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Heavy cream - 100 ml
  • Parmesan cheese (grated) - 30 grams
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - 1 tablespoon

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. While the pasta cooks, chop the chicken breast into bite-sized pieces and season with salt and black pepper.
  3. In a large skillet over medium heat, add the olive oil and cook the bacon until crispy. Remove from the skillet and set aside on paper towels to drain.
  4. In the same skillet, add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  5. Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
  6. Pour the heavy cream into the skillet, stirring to combine, and let it simmer for 2-3 minutes. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  7. Add the cooked pasta to the skillet and toss to coat in the sauce. Stir in the grated Parmesan cheese until melted and well combined.
  8. Crumble the crispy bacon over the top and garnish with chopped parsley before serving.
