Ingredients
- Pasta (fettuccine or any preferred type) - 150 grams
- Yellow onions - 2 medium (approximately 300 grams)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Vegetable broth - 1/2 cup
- Balsamic vinegar - 1 tablespoon
- Fresh thyme - 1 teaspoon (or 1/2 teaspoon dried)
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional, for serving) - 2 tablespoons, grated
Steps
- Slice the onions thinly and set them aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt, stirring occasionally.
- Cook the onions for about 15-20 minutes until they are caramelized and golden brown, reducing the heat if necessary to prevent burning.
- Add the minced garlic to the skillet and cook for another 1-2 minutes until fragrant.
- Pour in the vegetable broth and balsamic vinegar, scraping the bottom of the skillet to deglaze. Stir in the thyme, and let simmer for 5 minutes to reduce slightly.
- Meanwhile, cook the pasta according to package instructions in a pot of boiling salted water until al dente. Drain and reserve a little pasta water.
- Add the drained pasta to the skillet with the caramelized onions. Toss gently to combine, adding reserved pasta water if needed to help the sauce adhere.
- Season with salt and black pepper to taste. Serve warm, topped with grated Parmesan cheese if desired.
