Ingredients

  • Pasta (fettuccine or any preferred type) - 150 grams
  • Yellow onions - 2 medium (approximately 300 grams)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Vegetable broth - 1/2 cup
  • Balsamic vinegar - 1 tablespoon
  • Fresh thyme - 1 teaspoon (or 1/2 teaspoon dried)
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional, for serving) - 2 tablespoons, grated

Steps

  1. Slice the onions thinly and set them aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt, stirring occasionally.
  3. Cook the onions for about 15-20 minutes until they are caramelized and golden brown, reducing the heat if necessary to prevent burning.
  4. Add the minced garlic to the skillet and cook for another 1-2 minutes until fragrant.
  5. Pour in the vegetable broth and balsamic vinegar, scraping the bottom of the skillet to deglaze. Stir in the thyme, and let simmer for 5 minutes to reduce slightly.
  6. Meanwhile, cook the pasta according to package instructions in a pot of boiling salted water until al dente. Drain and reserve a little pasta water.
  7. Add the drained pasta to the skillet with the caramelized onions. Toss gently to combine, adding reserved pasta water if needed to help the sauce adhere.
  8. Season with salt and black pepper to taste. Serve warm, topped with grated Parmesan cheese if desired.
