Ingredients

  • Broccoli rabe - 200 grams
  • Garlic - 3 cloves, minced
  • Olive oil - 3 tablespoons
  • Red pepper flakes - 1/2 teaspoon
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, wash the broccoli rabe thoroughly and trim off the tough ends. Blanch the broccoli rabe in the boiling pasta water for about 2-3 minutes until bright green and slightly tender. Remove and drain, reserving 1/2 cup of the pasta water.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant, but be careful not to burn the garlic.
  4. Add the blanched broccoli rabe to the skillet and toss to coat in the oil. Season with salt and black pepper to taste, and cook for an additional 3-4 minutes until tender.
  5. Once the pasta is done, drain it and add it to the skillet with the broccoli rabe. Pour in the reserved pasta water and toss everything together to combine. Cook for another 1-2 minutes to let the flavors meld.
  6. Remove from heat, stir in the lemon juice, and sprinkle with grated Parmesan cheese before serving.
