- Onion - 1 small (chopped)
- Fresh basil - 1/4 cup (chopped)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese (optional) - 2 tablespoons (grated)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté for 2-3 minutes until it becomes translucent.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the chopped bell peppers to the skillet and season with salt and black pepper. Sauté for about 5-7 minutes until the peppers are tender.
- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta.
- Add the drained pasta to the skillet with the bell peppers and toss to combine. If needed, add a bit of reserved pasta water to create a light sauce.
- Remove from heat and stir in the fresh basil. Adjust seasoning if necessary.
- Serve hot, topped with grated Parmesan cheese if desired.
