  • Vegetable broth - 500 milliliters
  • Cherry tomatoes, halved - 200 grams
  • Spinach, fresh - 100 grams
  • Parmesan cheese, grated - 30 grams
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil, chopped - 1 tablespoon

Steps

  1. In a medium saucepan, bring the vegetable broth to a boil and add the pearl barley. Reduce heat to low and simmer for about 20 minutes, or until the barley is tender.
  2. While the barley is cooking, bring a separate pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
