- Onion (chopped) - 1 small
- Bell pepper (sliced) - 1/2 medium
- Salt - to taste
- Black pepper - to taste
- Fresh parsley (chopped) - 2 tablespoons
- Grated Parmesan cheese (optional, kosher) - 2 tablespoons
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sliced bell pepper to the skillet, cooking for an additional 2-3 minutes until the peppers are tender.
- Once the pasta is cooked, drain it and reserve 1/4 cup of the pasta water. Add the drained pasta to the skillet with the onion and peppers.
- Pour the barbecue sauce over the pasta, adding reserved pasta water as needed to achieve desired consistency. Stir well to combine all ingredients.
- Season with salt and black pepper to taste. Cook for an additional 2-3 minutes over low heat until everything is heated through.
- Serve hot, garnished with chopped fresh parsley and grated Parmesan cheese if desired.
