- Balsamic vinegar - 120 ml
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Cherry tomatoes (halved) - 200 grams
- Fresh basil leaves - 1/4 cup, chopped
- Parmesan cheese (grated) - 30 grams
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, in a small saucepan, combine the balsamic vinegar and bring to a simmer over medium heat, allowing it to reduce by half (approximately 5-7 minutes).
- In a large skillet, heat the olive oil over medium heat, then add the minced garlic and sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they start to soften.
- Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta and add it to the skillet with the tomatoes and garlic.
- Pour the reduced balsamic glaze over the pasta, tossing everything to coat evenly. If the pasta seems dry, add a little of the reserved pasta water.
- Season with salt and black pepper to taste, and stir in the chopped basil.
- Serve the pasta warm, topped with grated Parmesan cheese and additional basil if desired.
