Ingredients

  • Pasta (spaghetti or penne) - 200 grams
  • Balsamic vinegar - 120 ml
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Cherry tomatoes (halved) - 200 grams
  • Fresh basil leaves - 1/4 cup, chopped
  • Parmesan cheese (grated) - 30 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, in a small saucepan, combine the balsamic vinegar and bring to a simmer over medium heat, allowing it to reduce by half (approximately 5-7 minutes).
  3. In a large skillet, heat the olive oil over medium heat, then add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they start to soften.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta and add it to the skillet with the tomatoes and garlic.
  6. Pour the reduced balsamic glaze over the pasta, tossing everything to coat evenly. If the pasta seems dry, add a little of the reserved pasta water.
  7. Season with salt and black pepper to taste, and stir in the chopped basil.
  8. Serve the pasta warm, topped with grated Parmesan cheese and additional basil if desired.
