  • Ripe avocado - 1 medium
  • Garlic - 1 clove, minced
  • Fresh lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Fresh basil leaves - 10 leaves, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese (optional) - 2 tablespoons, grated

Steps

  1. Bring a large pot of salted water to a boil and add the pasta. Cook according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, cut the avocado in half, remove the pit, and scoop the flesh into a blender or food processor.
  3. Add the minced garlic, lemon juice, olive oil, salt, and black pepper to the blender with the avocado. Blend until smooth and creamy.
  4. Once the pasta is done, reserve 1/4 cup of pasta water, then drain the pasta and return it to the pot.
