Ingredients

  • Pasta (spaghetti or linguine) - 150 grams
  • Canned artichoke hearts (drained and quartered) - 200 grams
  • Kalamata olives (pitted and halved) - 100 grams
  • Garlic (minced) - 2 cloves
  • Olive oil - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - optional, to taste

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the quartered artichoke hearts and halved olives to the skillet, stirring gently to combine, and cook for about 3-4 minutes until heated through.
  5. Once the pasta is cooked, reserve about 1/2 cup of the pasta water, then drain the pasta.
  6. Add the drained pasta to the skillet with the artichokes and olives, along with the reserved pasta water, lemon juice, and chopped parsley.
  7. Toss everything together over medium heat for 1-2 minutes, allowing the flavors to meld. Season with salt, black pepper, and red pepper flakes if desired.
  8. Serve immediately, garnished with additional parsley and a drizzle of olive oil if desired.
