Ingredients

  • Pasta (spaghetti or fettuccine) - 200 grams
  • Canned artichoke hearts - 200 grams, drained and halved
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Lemon zest - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  4. Add the drained artichoke hearts to the skillet and cook for an additional 3-4 minutes, stirring occasionally.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the artichokes.
  6. Mix in the lemon zest, lemon juice, and chopped parsley, adding reserved pasta water as needed to create a light sauce.
  7. Season with salt and black pepper to taste, and toss everything together until well combined.
  8. Serve immediately, topped with grated Parmesan cheese.
