- Garlic - 2 cloves, minced
- Red pepper flakes - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Grated Parmesan cheese (optional, ensure kosher) - 2 tablespoons
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a skillet over medium heat.
- Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1 minute until fragrant but not browned.
- Add the anchovy fillets to the skillet, breaking them apart with a wooden spoon as they cook for another 2-3 minutes, allowing them to dissolve into the oil.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
- Add the drained pasta to the skillet with the anchovy mixture, tossing to coat well, and adding reserved pasta water as needed for desired consistency.
- Stir in the chopped parsley, lemon juice, and season with salt and black pepper to taste.
- Serve hot, topped with grated Parmesan cheese if desired.
