Ingredients
- Whole grain spaghetti - 150 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Canned diced tomatoes - 400 grams
- Kalamata olives - 100 grams, pitted and sliced
- Capers - 2 tablespoons, rinsed
- Red pepper flakes - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the whole grain spaghetti according to package instructions until al dente, about 10-12 minutes.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Pour in the canned diced tomatoes, stirring to combine, and let it simmer for about 5 minutes.
- Add the sliced Kalamata olives, capers, and red pepper flakes to the skillet, mixing well. Allow to simmer for an additional 5 minutes.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest.
- Add the drained pasta to the skillet with the sauce, mixing well to coat. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.
- Season with salt and black pepper to taste and stir in the chopped fresh parsley just before serving.
