  • Celery (diced) - 1 stalk
  • Onion (diced) - 1 small
  • Vegetable broth - 500 milliliters
  • Canned diced tomatoes (with juice) - 200 grams
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes (optional) - 1/4 teaspoon
  • Parmesan cheese (grated, for serving) - 2 tablespoons

Steps

  1. In a large pot, heat olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
