- Carrot (diced) - 1 medium
- Celery (diced) - 1 stalk
- Onion (diced) - 1 small
- Vegetable broth - 500 milliliters
- Canned diced tomatoes (with juice) - 200 grams
- Fresh parsley (chopped) - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red pepper flakes (optional) - 1/4 teaspoon
- Parmesan cheese (grated, for serving) - 2 tablespoons
Steps
- In a large pot, heat olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Add the minced garlic and cook for an additional minute until fragrant.
