Ingredients

  • Whole grain spaghetti - 160 grams
  • Turkey bacon - 100 grams, chopped
  • Egg - 1 large
  • Greek yogurt (non-fat) - 100 grams
  • Parmesan cheese (grated) - 30 grams
  • Garlic - 1 clove, minced
  • Black pepper - to taste
  • Salt - to taste
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Bring a large pot of salted water to a boil. Add the whole grain spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat a non-stick skillet over medium heat. Add the chopped turkey bacon and cook until crispy, about 5-7 minutes. Remove from heat and set aside.
  3. In a bowl, whisk together the egg, Greek yogurt, grated Parmesan cheese, minced garlic, and black pepper until smooth. Set aside.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
  5. Quickly add the hot pasta to the skillet with the turkey bacon, stirring well to combine. Remove from heat.
  6. Pour the yogurt mixture over the hot pasta and toss quickly to coat, adding reserved pasta water a little at a time until you reach your desired creaminess.
  7. Season with salt and additional black pepper to taste, then serve garnished with chopped parsley.
