- Whole grain spaghetti - 160 grams
- Turkey bacon - 100 grams, chopped
- Egg - 1 large
- Greek yogurt (non-fat) - 100 grams
- Parmesan cheese (grated) - 30 grams
- Garlic - 1 clove, minced
- Black pepper - to taste
- Salt - to taste
- Fresh parsley - 1 tablespoon, chopped
Steps
- Bring a large pot of salted water to a boil. Add the whole grain spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, heat a non-stick skillet over medium heat. Add the chopped turkey bacon and cook until crispy, about 5-7 minutes. Remove from heat and set aside.
- In a bowl, whisk together the egg, Greek yogurt, grated Parmesan cheese, minced garlic, and black pepper until smooth. Set aside.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
- Quickly add the hot pasta to the skillet with the turkey bacon, stirring well to combine. Remove from heat.
- Pour the yogurt mixture over the hot pasta and toss quickly to coat, adding reserved pasta water a little at a time until you reach your desired creaminess.
- Season with salt and additional black pepper to taste, then serve garnished with chopped parsley.
