Ingredients

  • 2 medium sweet potatoes - 400 grams, diced
  • 200 grams ground pork sausage (sugar-free)
  • 1 medium red bell pepper - 150 grams, diced
  • 1 medium green bell pepper - 150 grams, diced
  • 1 small onion - 100 grams, diced
  • 2 tablespoons olive oil - 30 ml
  • 2 cloves garlic - minced
  • 1 teaspoon smoked paprika - 5 grams
  • Salt - to taste
  • Black pepper - to taste
  • 2 large eggs - for topping (optional)

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes and cook for about 10 minutes, stirring occasionally until they begin to soften.
  3. Add the diced onion and continue cooking for another 5 minutes until the onion is translucent.
  4. Stir in the ground pork sausage, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.
  5. Add the diced red and green bell peppers, minced garlic, smoked paprika, salt, and black pepper. Cook for an additional 5 minutes until the peppers are tender.
  6. If desired, in a separate pan, fry or poach the eggs to your liking.
  7. Serve the hash hot, topped with fried or poached eggs.
