- 2 medium sweet potatoes - 400 grams, diced
- 200 grams ground pork sausage (sugar-free)
- 1 medium red bell pepper - 150 grams, diced
- 1 medium green bell pepper - 150 grams, diced
- 1 small onion - 100 grams, diced
- 2 tablespoons olive oil - 30 ml
- 2 cloves garlic - minced
- 1 teaspoon smoked paprika - 5 grams
- Salt - to taste
- Black pepper - to taste
- 2 large eggs - for topping (optional)
Steps
- Heat olive oil in a large skillet over medium heat.
- Add diced sweet potatoes and cook for about 10 minutes, stirring occasionally until they begin to soften.
- Add the diced onion and continue cooking for another 5 minutes until the onion is translucent.
- Stir in the ground pork sausage, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.
- Add the diced red and green bell peppers, minced garlic, smoked paprika, salt, and black pepper. Cook for an additional 5 minutes until the peppers are tender.
- If desired, in a separate pan, fry or poach the eggs to your liking.
- Serve the hash hot, topped with fried or poached eggs.
