  • eggs - 2 large
  • honey - 2 tablespoons (30ml)
  • baking soda - 1 teaspoon (5g)
  • cinnamon - 1 teaspoon (2g)
  • vanilla extract - 1 teaspoon (5ml)
  • salt - 1/4 teaspoon (1.5g)
  • chopped walnuts - 1/4 cup (30g) (optional)

Steps

  1. Preheat your oven to 175°C (350°F) and line a small loaf pan with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the eggs, honey, vanilla extract, and mix until well combined.
  4. In another bowl, combine almond flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  6. If using, fold in the chopped walnuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
