- Brown rice - 1 cup
- Chicken breast, diced - 200 grams
- Red bell pepper, diced - 1 medium
- Green peas - 1/2 cup
- Cherry tomatoes, halved - 1/2 cup
- Garlic, minced - 2 cloves
- Onion, chopped - 1 small
- Olive oil - 2 tablespoons
- Vegetable broth - 2 cups
- Paprika - 1 teaspoon
- Saffron threads - a pinch
- Salt - to taste
- Black pepper - to taste
- Parsley, chopped - for garnish
Steps
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken breast and season with salt and black pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
- In the same saucepan, add the remaining tablespoon of olive oil. Sauté the onion and garlic until translucent, about 3-4 minutes.
- Add the red bell pepper and cherry tomatoes to the saucepan, cooking for an additional 2-3 minutes until softened.
- Stir in the brown rice, paprika, and saffron, and cook for 1 minute to toast the rice.
- Pour in the vegetable broth, bring to a boil, then reduce heat to low. Cover the pan and simmer for 30 minutes, or until the rice is tender and the liquid is absorbed.
- After 20 minutes of simmering, add the green peas and cooked chicken back to the pan. Stir gently to combine.
- Once done, remove from heat and let it sit for 5 minutes before fluffing the rice with a fork.
- Garnish with chopped parsley before serving.
