Ingredients

  • Brown rice - 1 cup
  • Chicken breast, diced - 200 grams
  • Red bell pepper, diced - 1 medium
  • Green peas - 1/2 cup
  • Cherry tomatoes, halved - 1/2 cup
  • Garlic, minced - 2 cloves
  • Onion, chopped - 1 small
  • Olive oil - 2 tablespoons
  • Vegetable broth - 2 cups
  • Paprika - 1 teaspoon
  • Saffron threads - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Parsley, chopped - for garnish

Steps

  1. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken breast and season with salt and black pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  2. In the same saucepan, add the remaining tablespoon of olive oil. Sauté the onion and garlic until translucent, about 3-4 minutes.
  3. Add the red bell pepper and cherry tomatoes to the saucepan, cooking for an additional 2-3 minutes until softened.
  4. Stir in the brown rice, paprika, and saffron, and cook for 1 minute to toast the rice.
  5. Pour in the vegetable broth, bring to a boil, then reduce heat to low. Cover the pan and simmer for 30 minutes, or until the rice is tender and the liquid is absorbed.
  6. After 20 minutes of simmering, add the green peas and cooked chicken back to the pan. Stir gently to combine.
  7. Once done, remove from heat and let it sit for 5 minutes before fluffing the rice with a fork.
  8. Garnish with chopped parsley before serving.
