- Spinach - 100 grams, chopped
- Parsley - 2 tablespoons, chopped
- Dill - 1 tablespoon, chopped
- Pernod or anise-flavored liqueur - 1 tablespoon
- Breadcrumbs - 50 grams
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Lemon wedges - for serving
Steps
- Preheat your oven to 200°C (400°F).
- In a skillet, melt the unsalted butter over medium heat and add the shallots and garlic, sautéing until fragrant and translucent, about 3 minutes.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Stir in the parsley, dill, Pernod, salt, and pepper, and cook for another minute.
