Ingredients

  • Fresh oysters - 300 grams, shucked
  • Coconut milk - 400 ml
  • Bone broth - 200 ml
  • Garlic - 2 cloves, minced
  • Shallots - 1 medium, diced
  • Celery - 1 stalk, diced
  • Carrot - 1 medium, diced
  • Thyme - 1 teaspoon, fresh or dried
  • Black pepper - to taste
  • Sea salt - to taste
  • Olive oil - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, heat olive oil over medium heat. Add minced garlic, diced shallots, diced celery, and diced carrot, and sauté until softened, about 5-7 minutes.
  2. Pour in the bone broth and bring to a gentle simmer. Add the coconut milk, thyme, salt, and black pepper.
  3. Once the mixture is simmering, gently add the shucked oysters and cook for an additional 5 minutes, or until the oysters are just cooked through.
