- Fresh oysters - 300 grams, shucked
- Coconut milk - 400 ml
- Bone broth - 200 ml
- Garlic - 2 cloves, minced
- Shallots - 1 medium, diced
- Celery - 1 stalk, diced
- Carrot - 1 medium, diced
- Thyme - 1 teaspoon, fresh or dried
- Black pepper - to taste
- Sea salt - to taste
- Olive oil - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a medium pot, heat olive oil over medium heat. Add minced garlic, diced shallots, diced celery, and diced carrot, and sauté until softened, about 5-7 minutes.
- Pour in the bone broth and bring to a gentle simmer. Add the coconut milk, thyme, salt, and black pepper.
