  • Trout fillets - 2 (about 200g each)

  • Lemon - 1 (zested and juiced)
  • Garlic - 2 cloves (minced)
  • Fresh parsley - 2 tablespoons (chopped)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Cherry tomatoes - 200g (halved)
  • Fresh thyme - 1 teaspoon (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix the olive oil, lemon zest, lemon juice, minced garlic, chopped parsley, salt, black pepper, and paprika to create a marinade.
  3. Place the trout fillets skin-side down on a baking sheet lined with parchment paper.
  4. Brush the marinade evenly over the trout fillets.
  5. Scatter the halved cherry tomatoes around the trout on the baking sheet.
  6. If using, place fresh thyme sprigs on top of the trout for added flavor.
  7. Bake in the preheated oven for 15-20 minutes, or until the trout is cooked through and flakes easily with a fork.
