Ingredients

  • Trout fillets - 2 pieces (about 200g each)
  • Olive oil - 2 tablespoons
  • Lemon - 1, juiced and zested
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 150g, halved
  • Lemon slices - 4, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix together the olive oil, lemon juice, lemon zest, minced garlic, chopped parsley, chopped thyme, salt, and black pepper.
  3. Place the trout fillets skin-side down on a lined baking sheet.
  4. Brush the herb and oil mixture generously over the trout fillets.
  5. Scatter the halved cherry tomatoes around the trout on the baking sheet.
  6. Place lemon slices on top of the trout for added flavor.
  7. Bake in the preheated oven for 15-20 minutes, or until the trout flakes easily with a fork.
  8. Remove from the oven and let it rest for a few minutes before serving.
  9. Garnish with additional fresh parsley if desired and serve hot.
