- Trout fillets - 2 pieces (about 200g each)
- Olive oil - 2 tablespoons
- Lemon - 1, juiced and zested
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 150g, halved
- Lemon slices - 4, for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a small bowl, mix together the olive oil, lemon juice, lemon zest, minced garlic, chopped parsley, chopped thyme, salt, and black pepper.
- Place the trout fillets skin-side down on a lined baking sheet.
- Brush the herb and oil mixture generously over the trout fillets.
- Scatter the halved cherry tomatoes around the trout on the baking sheet.
- Place lemon slices on top of the trout for added flavor.
- Bake in the preheated oven for 15-20 minutes, or until the trout flakes easily with a fork.
