- Eggs - 4 large
- Heavy cream - 2 tablespoons
- Bell pepper (diced) - 1/2 cup
- Spinach (fresh) - 1 cup
- Green onions (sliced) - 2 tablespoons
- Cheddar cheese (shredded) - 1/2 cup
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 190°C (375°F).
- In a mixing bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined.
- In a skillet over medium heat, add olive oil and sauté the bell pepper and spinach until softened, about 3-4 minutes.
- Remove the skillet from heat and let the vegetable mixture cool slightly before adding it to the egg mixture.
- Stir in the green onions and half of the shredded cheddar cheese into the egg and vegetable mixture.
- Grease a baking dish with olive oil and pour the egg mixture into it.
- Sprinkle the remaining cheddar cheese evenly on top.
- Bake in the preheated oven for 20-25 minutes, or until the omelette is set and lightly golden.
- Let it cool for a couple of minutes before slicing and serving.
