Ingredients

  • Eggs - 4 large
  • Heavy cream - 2 tablespoons
  • Bell pepper (diced) - 1/2 cup
  • Spinach (fresh) - 1 cup
  • Green onions (sliced) - 2 tablespoons
  • Cheddar cheese (shredded) - 1/2 cup
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a mixing bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined.
  3. In a skillet over medium heat, add olive oil and sauté the bell pepper and spinach until softened, about 3-4 minutes.
  4. Remove the skillet from heat and let the vegetable mixture cool slightly before adding it to the egg mixture.
  5. Stir in the green onions and half of the shredded cheddar cheese into the egg and vegetable mixture.
  6. Grease a baking dish with olive oil and pour the egg mixture into it.
  7. Sprinkle the remaining cheddar cheese evenly on top.
  8. Bake in the preheated oven for 20-25 minutes, or until the omelette is set and lightly golden.
  9. Let it cool for a couple of minutes before slicing and serving.
