Ingredients

  • Almond flour - 1 cup
  • Tapioca flour - 1/4 cup
  • Baking powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Osage berries - 1/2 cup (fresh or frozen)
  • Mozzarella cheese - 1/2 cup (optional, for non-Paleo)
  • Bell pepper - 1/4 cup, diced
  • Red onion - 1/4 cup, thinly sliced
  • Spinach - 1 cup, fresh
  • Olive oil - for drizzling
  • Fresh basil - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, tapioca flour, baking powder, and salt.
  3. In a separate bowl, whisk together the egg and 2 tablespoons of olive oil.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  5. Place the dough on a parchment-lined baking sheet and press it into a round pizza shape, about 1/4 inch thick.
  6. Bake the crust in the preheated oven for 10-12 minutes until golden brown.
  7. While the crust is baking, prepare the toppings by washing the Osage berries, dicing the bell pepper, and slicing the red onion.
  8. Once the crust is done, remove it from the oven and spread the Osage berries evenly over the surface.
  9. Top with diced bell pepper, sliced red onion, and fresh spinach.
  10. If desired, sprinkle mozzarella cheese on top.
  11. Drizzle with a little olive oil and return to the oven for another 5-7 minutes until the cheese is melted and the vegetables are tender.
  12. Remove from the oven, garnish with fresh basil, slice, and serve.
