Ingredients
- Salmon fillets - 300 grams
- Olive oil - 2 tablespoons
- Lemon - 1, juiced
- Garlic - 2 cloves, minced
- Fresh dill - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, sliced
- Cherry tomatoes - 150 grams, halved
- Red onion - 1 small, sliced
- Quinoa - 100 grams (dry)
Steps
- Preheat the oven to 200°C (400°F).
- In a small bowl, mix the olive oil, lemon juice, minced garlic, chopped dill, salt, and black pepper to create a marinade.
- Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Let marinate for 15 minutes.
- While the salmon is marinating, rinse the quinoa under cold water and then cook it according to package instructions, typically using 2 cups of water for 1 cup of quinoa. Bring to a boil, then reduce heat and simmer for about 15 minutes until fluffy.
- On a large baking sheet, arrange the zucchini, bell pepper, cherry tomatoes, and red onion. Drizzle with a little olive oil, season with salt and pepper, and toss to coat.
- Remove the salmon from the marinade and place it on the baking sheet with the vegetables.
- Bake in the preheated oven for 20 minutes or until the salmon flakes easily with a fork and the vegetables are tender.
- Serve the baked salmon and vegetables over a bed of cooked quinoa.
