  • Cherry tomatoes - 150 grams, halved
  • Red onion - 1 small, sliced
  • Quinoa - 100 grams (dry)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix the olive oil, lemon juice, minced garlic, chopped dill, salt, and black pepper to create a marinade.
  3. Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Let marinate for 15 minutes.
  4. While the salmon is marinating, rinse the quinoa under cold water and then cook it according to package instructions, typically using 2 cups of water for 1 cup of quinoa. Bring to a boil, then reduce heat and simmer for about 15 minutes until fluffy.
