Ingredients

  • Rolled oats - 1 cup (90g)
  • Almond milk - 2 cups (480ml)
  • Maple syrup - 2 tablespoons (30ml)
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Banana - 1 medium, sliced
  • Almonds - 1/4 cup (30g), chopped
  • Blueberries - 1/2 cup (75g)

Steps

  1. In a medium saucepan, combine the rolled oats, almond milk, maple syrup, cinnamon, and salt.
  2. Bring the mixture to a boil over medium heat, stirring occasionally.
  3. Once boiling, reduce the heat to low and let it simmer for about 5 minutes, stirring frequently until the oats are cooked and the mixture thickens.
  4. Remove from heat and let it sit for a minute to further thicken, if desired.
  5. Divide the oatmeal into two bowls and top with sliced banana, chopped almonds, and blueberries.
