- Honey - 2 tablespoons
- Coconut oil, melted - 2 tablespoons
- Egg - 1 large
- Baking soda - 1/2 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Raisins - 1/2 cup
- Chopped nuts (optional) - 1/4 cup
Steps
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, protein powder, whole wheat flour, brown sugar, baking soda, cinnamon, and salt.
- In a separate bowl, whisk together the melted coconut oil, honey, and egg until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the raisins and chopped nuts if using.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 5 cm apart.
- Bake for 10-12 minutes or until the edges are golden and the centers look set.
