Ingredients

  • Rolled oats - 1 cup
  • Milk (dairy or plant-based) - 1 cup
  • Egg - 1 large
  • Baking powder - 1 tsp
  • Vanilla extract - 1 tsp
  • Honey or maple syrup - 1 tbsp
  • Cinnamon - 1/2 tsp
  • Salt - 1/4 tsp
  • Greek yogurt (for topping) - 1/2 cup
  • Fresh berries (for topping) - 1/2 cup

Steps

  1. In a blender, combine the rolled oats, milk, egg, baking powder, vanilla extract, honey, cinnamon, and salt. Blend until smooth.
  2. Let the batter rest for about 5 minutes to thicken.
  3. Preheat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or oil.
  4. Pour about 1/4 cup of the batter onto the skillet for each pancake.
  5. Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
  6. Repeat with the remaining batter.
