Ingredients

  • Rolled oats - 1 cup
  • Almonds (chopped) - 1/4 cup
  • Walnuts (chopped) - 1/4 cup
  • Sunflower seeds - 2 tablespoons
  • Honey - 1/4 cup
  • Peanut butter - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Dark chocolate chips - 2 tablespoons (optional)

Steps

  1. Preheat your oven to 180°C (350°F) and line an 8x8 inch baking dish with parchment paper.
  2. In a large mixing bowl, combine rolled oats, chopped almonds, chopped walnuts, sunflower seeds, cinnamon, and salt.
  3. In a small saucepan over low heat, mix together honey and peanut butter until smooth and combined. Remove from heat and stir in vanilla extract.
  4. Pour the honey-peanut butter mixture over the dry ingredients and mix well until everything is evenly coated.
  5. Transfer the mixture to the prepared baking dish and press it firmly into an even layer.
  6. If using, sprinkle dark chocolate chips on top and gently press them into the mixture.
  7. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
  8. Remove from the oven and let it cool completely in the pan before lifting it out and cutting it into bars.
