Ingredients

  • Mixed salad greens - 100g
  • Cherry tomatoes - 150g
  • Green beans - 100g
  • Small potatoes - 200g
  • Canned tuna in olive oil - 150g
  • Hard-boiled eggs - 2 large
  • Black olives - 50g
  • Red onion - 1 small, thinly sliced
  • Extra virgin olive oil - 3 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Start by boiling the small potatoes in salted water for about 15 minutes, or until tender. Drain and let cool, then cut into halves.
  2. While the potatoes are cooking, trim the green beans and blanch them in boiling water for 3-4 minutes. Drain and immediately place them in ice water to stop the cooking process.
  3. In a large bowl, combine the mixed salad greens, halved cherry tomatoes, blanched green beans, halved potatoes, and sliced red onion.
  4. Add the canned tuna (drained), halved hard-boiled eggs, and black olives on top of the salad mixture.
  5. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to create the vinaigrette.
  6. Drizzle the vinaigrette over the salad, toss gently to combine, and serve immediately.
