  • Crab meat - 100 grams, cooked
  • Okra - 100 grams, sliced (optional)

  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the andouille sausage and cook until browned, about 5 minutes.
  2. Add the onion, celery, and green bell pepper to the pot. Sauté for about 5 minutes, until the vegetables are tender.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Sprinkle the gluten-free flour over the mixture, stirring well to combine, and cook for 2-3 minutes to create a roux.
  5. Gradually add the chicken broth, stirring continuously to prevent lumps from forming.
  6. Add the diced tomatoes, bay leaf, thyme, cayenne pepper, paprika, and season with salt and black pepper to taste.

  8. Add the shrimp and crab meat into the pot, along with the sliced okra if using. Cook for an additional 5-7 minutes until the seafood is cooked through.
