Ingredients
- Gluten-free all-purpose flour - 1 cup (120g)
- Baking powder - 1 teaspoon (5g)
- Granulated sugar - 2 tablespoons (25g)
- Salt - 1/4 teaspoon (1.5g)
- Egg - 1 large
- Milk - 1/2 cup (120ml)
- Vanilla extract - 1 teaspoon (5ml)
- Butter, melted - 2 tablespoons (30g)
- Oil for frying - 2 cups (480ml)
- Powdered sugar - for dusting (as needed)
Steps
- In a mixing bowl, whisk together the gluten-free all-purpose flour, baking powder, granulated sugar, and salt.
- In another bowl, beat the egg and then mix in the milk, vanilla extract, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. The dough should be slightly sticky.
- Cover the bowl with plastic wrap and let it rest for 10 minutes.
- While the dough is resting, heat the oil in a deep frying pan over medium heat until it reaches 180°C (350°F).
- Using a spoon or a small cookie scoop, drop small balls of dough (about 1 tablespoon each) into the hot oil, being careful not to overcrowd the pan.
- Fry the beignets for about 2-3 minutes on each side, or until they are golden brown.
- Remove the beignets from the oil and place them on paper towels to drain excess oil.
- Dust the warm beignets generously with powdered sugar before serving.
