  • Butter, melted - 2 tablespoons (30g)
  • Oil for frying - 2 cups (480ml)
  • Powdered sugar - for dusting (as needed)

Steps

  1. In a mixing bowl, whisk together the gluten-free all-purpose flour, baking powder, granulated sugar, and salt.
  2. In another bowl, beat the egg and then mix in the milk, vanilla extract, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. The dough should be slightly sticky.
  4. Cover the bowl with plastic wrap and let it rest for 10 minutes.
  5. While the dough is resting, heat the oil in a deep frying pan over medium heat until it reaches 180°C (350°F).
  6. Using a spoon or a small cookie scoop, drop small balls of dough (about 1 tablespoon each) into the hot oil, being careful not to overcrowd the pan.
  7. Fry the beignets for about 2-3 minutes on each side, or until they are golden brown.
