Ingredients

  • Lobster tails - 2 (about 450 grams total)
  • Butter - 4 tablespoons (56 grams)
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Cauliflower - 300 grams, cut into florets
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a pot of boiling salted water, blanch the cauliflower florets for 3-4 minutes until slightly tender. Drain and set aside.
  3. In a large mixing bowl, combine the blanched cauliflower, olive oil, paprika, salt, and black pepper. Toss well to coat evenly.
  4. Arrange the seasoned cauliflower on a baking sheet and bake in the preheated oven for 15 minutes.
  5. Meanwhile, prepare the lobster tails by cutting them down the middle with kitchen scissors to expose the meat.
  6. In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and stir in the parsley and lemon juice.
  7. After the cauliflower has baked for 15 minutes, remove the tray from the oven and place the lobster tails on the sheet beside the cauliflower.
  8. Brush the garlic butter mixture generously over the lobster tails and return to the oven for an additional 10-12 minutes, or until the lobster is cooked through and opaque.
  9. Once done, remove from the oven and let it rest for a few minutes before serving. Garnish with extra parsley if desired.
