- Lobster tails - 2 (about 450 grams total)
- Butter - 4 tablespoons (56 grams)
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Cauliflower - 300 grams, cut into florets
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- In a pot of boiling salted water, blanch the cauliflower florets for 3-4 minutes until slightly tender. Drain and set aside.
- In a large mixing bowl, combine the blanched cauliflower, olive oil, paprika, salt, and black pepper. Toss well to coat evenly.
- Arrange the seasoned cauliflower on a baking sheet and bake in the preheated oven for 15 minutes.
- Meanwhile, prepare the lobster tails by cutting them down the middle with kitchen scissors to expose the meat.
- In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and stir in the parsley and lemon juice.
- After the cauliflower has baked for 15 minutes, remove the tray from the oven and place the lobster tails on the sheet beside the cauliflower.
- Brush the garlic butter mixture generously over the lobster tails and return to the oven for an additional 10-12 minutes, or until the lobster is cooked through and opaque.
- Once done, remove from the oven and let it rest for a few minutes before serving. Garnish with extra parsley if desired.
