- Bacon (chopped) - 2 slices
- Chicken broth (gluten-free) - 500 ml
- Heavy cream - 200 ml
- Unsalted butter - 1 tablespoon
- Thyme (dried) - 1/2 teaspoon
- Black pepper - to taste

- Fresh parsley (chopped) - for garnish
Steps
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the rendered fat in the pot.
- In the same pot, add butter and sauté the chopped onion and celery until softened, about 5 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Stir in the diced potatoes, dried thyme, and chicken broth. Bring to a boil, then reduce heat to a simmer and cook until potatoes are tender, about 15 minutes.
- While the potatoes are cooking, rinse the clams under cold water to remove any sand or grit.
- Add the clams to the pot and cover. Cook for about 5-7 minutes, or until the clams have opened. Discard any clams that do not open.
- Remove the pot from heat and stir in the heavy cream. Season with salt and black pepper to taste.
- Serve hot, garnished with crispy bacon and chopped fresh parsley.
