Ingredients

  • Brown rice - 1 cup
  • Fresh nettle leaves - 100 grams (washed and stems removed)
  • Garlic - 2 cloves (minced)
  • Onion - 1 small (finely chopped)
  • Olive oil - 2 tablespoons
  • Vegetable broth - 2 cups
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Chopped parsley - 2 tablespoons (for garnish)

Steps

  1. Rinse the brown rice under cold water until the water runs clear. Drain and set aside.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the brown rice and cook for 2-3 minutes, allowing the rice to absorb the flavors.
  5. Pour in the vegetable broth, add salt and black pepper, and bring to a boil.
  6. Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and all the liquid is absorbed.
  7. Meanwhile, in a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the nettle leaves and sauté for about 3-5 minutes until wilted.
  8. Once the rice is cooked, fluff it with a fork and stir in the sautéed nettles and lemon juice.
  9. Serve warm, garnished with chopped parsley.
