- Brown rice - 1 cup
- Fresh nettle leaves - 100 grams (washed and stems removed)
- Garlic - 2 cloves (minced)
- Onion - 1 small (finely chopped)
- Olive oil - 2 tablespoons
- Vegetable broth - 2 cups
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Chopped parsley - 2 tablespoons (for garnish)
Steps
- Rinse the brown rice under cold water until the water runs clear. Drain and set aside.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the brown rice and cook for 2-3 minutes, allowing the rice to absorb the flavors.
- Pour in the vegetable broth, add salt and black pepper, and bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and all the liquid is absorbed.
- Meanwhile, in a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the nettle leaves and sauté for about 3-5 minutes until wilted.
- Once the rice is cooked, fluff it with a fork and stir in the sautéed nettles and lemon juice.
- Serve warm, garnished with chopped parsley.
