- Brown rice - 150 grams
- Fresh nettle leaves - 100 grams (washed and stems removed)
- Chicken or vegetable broth - 400 ml
- Olive oil - 1 tablespoon
- Garlic - 2 cloves (minced)
- Onion - 1 small (finely chopped)
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the brown rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the rinsed rice and toast it for about 2 minutes, stirring frequently.
- Pour in the chicken or vegetable broth and bring to a boil.
- Reduce heat to low, cover, and let simmer for about 25 minutes or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, prepare the nettles by carefully blanching them in boiling water for 1-2 minutes, then drain and chop.
- Once the rice is cooked, fluff it with a fork and gently fold in the blanched nettles, lemon juice, salt, and black pepper to taste.
- Serve warm, garnished with additional lemon juice if desired.
