Ingredients

  • Brown rice - 150 grams
  • Fresh nettle leaves - 100 grams (washed and stems removed)
  • Chicken or vegetable broth - 400 ml
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves (minced)
  • Onion - 1 small (finely chopped)
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the brown rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the rinsed rice and toast it for about 2 minutes, stirring frequently.
  5. Pour in the chicken or vegetable broth and bring to a boil.
  6. Reduce heat to low, cover, and let simmer for about 25 minutes or until the rice is cooked and the liquid is absorbed.
  7. While the rice is cooking, prepare the nettles by carefully blanching them in boiling water for 1-2 minutes, then drain and chop.
  8. Once the rice is cooked, fluff it with a fork and gently fold in the blanched nettles, lemon juice, salt, and black pepper to taste.
  9. Serve warm, garnished with additional lemon juice if desired.
