  • Fresh nettle leaves - 100 grams
  • Dandelion greens - 50 grams
  • Lamb's quarters - 50 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, diced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened and fragrant, about 5 minutes.
  2. Add the nettle leaves, dandelion greens, and lamb's quarters to the pot. Sauté for another 3-4 minutes until the greens are wilted.
  3. Pour in the vegetable broth and bring the mixture to a gentle simmer. Cook for 15-20 minutes, allowing the flavors to meld.
  4. Remove the pot from heat and let it cool slightly. Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender.
  5. Return the blended soup to the pot, season with salt, black pepper, and lemon juice to taste. Heat gently before serving.
