- Potatoes - 300 grams, peeled and sliced thinly
- Coconut milk - 200 ml
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutmeg - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat and add the chopped onion and minced garlic, sautéing until translucent, about 5 minutes.
- Add the nettle leaves to the skillet and cook for an additional 3-4 minutes until wilted. Remove from heat.
- In a large bowl, combine the sliced potatoes, sautéed nettles, coconut milk, salt, black pepper, and nutmeg. Mix well to ensure the potatoes are evenly coated.
- Transfer the mixture to a greased baking dish, spreading it out evenly.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and continue to bake for an additional 10-15 minutes, or until the potatoes are tender and the top is slightly golden.
