  • Nettle leaves - 100 grams, washed and stems removed

  • Coconut milk - 200 ml
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, finely chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and add the chopped onion and minced garlic, sautéing until translucent, about 5 minutes.
  3. Add the nettle leaves to the skillet and cook for an additional 3-4 minutes until wilted. Remove from heat.
  4. In a large bowl, combine the sliced potatoes, sautéed nettles, coconut milk, salt, black pepper, and nutmeg. Mix well to ensure the potatoes are evenly coated.
  5. Transfer the mixture to a greased baking dish, spreading it out evenly.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
