- Nettle leaves - 100 grams, fresh and cleaned
- Mushrooms (button or cremini) - 200 grams, sliced
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Coconut milk - 200 ml
- Olive oil - 2 tablespoons
- Almond flour - 50 grams
- Nutritional yeast - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Thyme - 1 teaspoon, dried
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until translucent.
- Add sliced mushrooms to the skillet and cook until they release their juices and become tender, about 5-7 minutes.
- Stir in the cleaned nettle leaves, salt, black pepper, and thyme, cooking for another 3-4 minutes until the nettles wilt.
- In a mixing bowl, combine the cooked mushroom and nettle mixture with coconut milk and nutritional yeast, mixing well.
- Transfer the mixture to a baking dish and sprinkle almond flour evenly on top.
- Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
- Remove from the oven and let it cool for a few minutes before garnishing with chopped parsley and serving.
