- Xanthan gum - 1 teaspoon
- Butter - 50 grams, melted
- Egg - 1 large
- Milk - 100 milliliters
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent, about 3-4 minutes.
- Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the chopped cabbage, salt, and pepper. Cook until the cabbage is softened, about 5 minutes. Remove from heat and let the filling cool.
- In a mixing bowl, combine gluten-free flour, xanthan gum, and melted butter. Mix well.
- In a separate bowl, whisk together the egg and milk. Gradually add this mixture to the flour mixture, stirring until a dough forms.
- Divide the dough into 2 equal portions. Roll each portion into a circle about 1/4 inch thick.
- Place a generous scoop of the beef and cabbage filling in the center of each dough circle.
- Fold the dough over the filling to create a pocket, pinching the edges to seal.
- Place the Runzas on a greased baking sheet and bake in the preheated oven for 20-25 minutes, or until golden brown.
- Remove from the oven and let cool slightly before serving.
