Ingredients

  • Ground beef - 250 grams
  • Green cabbage - 150 grams, finely chopped

  • Garlic - 2 cloves, minced
  • Gluten-free all-purpose flour - 200 grams
  • Xanthan gum - 1 teaspoon
  • Butter - 50 grams, melted
  • Egg - 1 large
  • Milk - 100 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent, about 3-4 minutes.
  3. Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  4. Stir in the chopped cabbage, salt, and pepper. Cook until the cabbage is softened, about 5 minutes. Remove from heat and let the filling cool.
  5. In a mixing bowl, combine gluten-free flour, xanthan gum, and melted butter. Mix well.
  6. In a separate bowl, whisk together the egg and milk. Gradually add this mixture to the flour mixture, stirring until a dough forms.
  7. Divide the dough into 2 equal portions. Roll each portion into a circle about 1/4 inch thick.
  8. Place a generous scoop of the beef and cabbage filling in the center of each dough circle.
  9. Fold the dough over the filling to create a pocket, pinching the edges to seal.
  10. Place the Runzas on a greased baking sheet and bake in the preheated oven for 20-25 minutes, or until golden brown.
