  • bell pepper - 1 medium, diced
  • green peas - 1/2 cup
  • green onions - 2, chopped
  • soy sauce - 2 tablespoons (low sodium)
  • egg - 1, beaten
  • sesame oil - 1 teaspoon
  • cilantro - 1/4 cup, chopped
  • lime - 1, cut into wedges

Steps

  1. Heat olive oil in a large skillet or wok over medium heat.
  2. Add minced garlic and ginger, sauté for 1 minute until fragrant.
  3. Add diced carrot and bell pepper, stirring for 3-4 minutes until slightly softened.
  4. Stir in green peas and cook for another 2 minutes.
  5. Push the vegetables to one side of the skillet, add beaten egg to the other side, and scramble until fully cooked.
  6. Add the cooked brown rice to the skillet, mixing everything together.
  7. Pour soy sauce and sesame oil over the rice, stirring well to combine and heat through, about 3-5 minutes.
