- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Shallot - 1 small, finely chopped
- Canned crushed tomatoes - 400 grams
- Dried oregano - 1 teaspoon
- Red pepper flakes - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon wedges - for serving
Steps
- Clean the mussels under cold water, scrubbing the shells and removing any beards. Discard any mussels that are open and do not close when tapped.
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
- Stir in the crushed tomatoes, oregano, red pepper flakes, salt, and black pepper. Bring the mixture to a simmer and let it cook for 5 minutes to meld the flavors.
- Add the cleaned mussels to the pot, cover with a lid, and cook for 5-7 minutes, or until all the mussels have opened. Discard any mussels that remain closed.
- Remove the pot from heat and stir in the chopped parsley.
- Serve the mussels in bowls with plenty of the marinara sauce, garnished with additional parsley and lemon wedges on the side.
