- Fresh parsley - 2 tablespoons, chopped
- Thyme - 1 teaspoon, dried or fresh
- Lemon juice - 1 tablespoon
- White wine (dry) - 120 ml
- Vegetable broth - 240 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the white wine and vegetable broth to the pot, then stir in the thyme, salt, and black pepper. Bring the mixture to a simmer.
- Carefully add the cleaned mussels to the pot, cover with a lid, and cook for 5-7 minutes or until the mussels have opened.
- Remove the pot from heat. Stir in the lemon juice and chopped parsley.
- Serve the mussels in bowls, ladling the broth over them. Enjoy with crusty Paleo-friendly bread if desired.
