Ingredients

  • Wild rice - 1 cup (200g)
  • Mushrooms (cremini or button) - 200g, sliced
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Vegetable or chicken broth - 2 cups (480ml)
  • Olive oil - 2 tablespoons
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the wild rice under cold water and drain.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sliced mushrooms to the pan, cooking for another 5-7 minutes until the mushrooms are softened and browned.
  4. Stir in the rinsed wild rice, broth, thyme, salt, and black pepper. Bring to a boil.
  5. Once boiling, reduce the heat to low, cover the saucepan, and let simmer for 30-35 minutes, or until the wild rice is tender and has absorbed most of the liquid.
  6. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
  7. Drizzle with the remaining tablespoon of olive oil, garnish with chopped parsley, and serve warm.
