- Wild rice - 1 cup (200g)
- Mushrooms (cremini or button) - 200g, sliced
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Vegetable or chicken broth - 2 cups (480ml)
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the wild rice under cold water and drain.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sliced mushrooms to the pan, cooking for another 5-7 minutes until the mushrooms are softened and browned.
- Stir in the rinsed wild rice, broth, thyme, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let simmer for 30-35 minutes, or until the wild rice is tender and has absorbed most of the liquid.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
- Drizzle with the remaining tablespoon of olive oil, garnish with chopped parsley, and serve warm.
