- Fettuccine pasta - 150 grams
- Olive oil - 2 tablespoons
- Butter - 2 tablespoons
- Garlic - 4 cloves, minced
- Shallot - 1 small, finely chopped
- Mushrooms (cremini or button) - 300 grams, sliced
- White wine - 100 milliliters
- Vegetable broth - 100 milliliters
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
- Grated Parmesan cheese - 30 grams (optional)
Steps
- Bring a pot of salted water to a boil, and cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
- In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and softened, about 2 minutes.
- Add the sliced mushrooms to the skillet, cooking until they are browned and have released their moisture, about 5-7 minutes.
- Pour in the white wine and vegetable broth, bringing the mixture to a simmer. Let it cook for about 5 minutes until the sauce reduces slightly.
- Stir in the remaining butter, lemon juice, chopped parsley, and season with salt, pepper, and red pepper flakes if using. Mix well to combine.
- Add the cooked fettuccine to the skillet, tossing it in the sauce until well coated. If the sauce is too thick, add a splash of reserved pasta water to reach the desired consistency.
- Serve the Mushroom Scampi hot, garnished with additional parsley and grated Parmesan cheese if desired.
