Ingredients

  • Fettuccine pasta - 150 grams
  • Olive oil - 2 tablespoons
  • Butter - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Shallot - 1 small, finely chopped
  • Mushrooms (cremini or button) - 300 grams, sliced
  • White wine - 100 milliliters
  • Vegetable broth - 100 milliliters
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Grated Parmesan cheese - 30 grams (optional)

Steps

  1. Bring a pot of salted water to a boil, and cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
  2. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and softened, about 2 minutes.
  3. Add the sliced mushrooms to the skillet, cooking until they are browned and have released their moisture, about 5-7 minutes.
  4. Pour in the white wine and vegetable broth, bringing the mixture to a simmer. Let it cook for about 5 minutes until the sauce reduces slightly.
  5. Stir in the remaining butter, lemon juice, chopped parsley, and season with salt, pepper, and red pepper flakes if using. Mix well to combine.
  6. Add the cooked fettuccine to the skillet, tossing it in the sauce until well coated. If the sauce is too thick, add a splash of reserved pasta water to reach the desired consistency.
  7. Serve the Mushroom Scampi hot, garnished with additional parsley and grated Parmesan cheese if desired.
