- Fresh mushrooms (button or cremini) - 100 grams, diced
- Vegetable broth - 500 ml
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Parmesan cheese (grated) - 50 grams
- Egg - 1 large
- Breadcrumbs - 50 grams
- Salt - to taste
- Pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a saucepan, heat the vegetable broth and keep it warm over low heat.
- In a separate large skillet, heat the olive oil over medium heat and sauté the onions until translucent, about 3-4 minutes.
- Add the garlic and diced mushrooms to the skillet, cooking until the mushrooms are softened, about 5 minutes.
- Stir in the Arborio rice, cooking for 2 minutes until the rice is slightly translucent.
- Begin adding the warm vegetable broth one ladle at a time, stirring frequently and allowing the rice to absorb the liquid before adding more. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
- Once the rice is cooked, stir in the grated Parmesan cheese, salt, pepper, and chopped parsley. Remove from heat and let it cool for 10 minutes.
- Preheat the oven to 200°C (400°F).
- Once the risotto mixture has cooled slightly, mix in the egg until well combined.
- Form the risotto mixture into small balls (about 2.5 cm in diameter) and roll each ball in breadcrumbs to coat.
- Place the risotto bites on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden brown and crispy.
