Ingredients

  • Arborio rice - 150 grams
  • Fresh mushrooms (button or cremini) - 100 grams, diced
  • Vegetable broth - 500 ml
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Parmesan cheese (grated) - 50 grams
  • Egg - 1 large
  • Breadcrumbs - 50 grams
  • Salt - to taste
  • Pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a saucepan, heat the vegetable broth and keep it warm over low heat.
  2. In a separate large skillet, heat the olive oil over medium heat and sauté the onions until translucent, about 3-4 minutes.
  3. Add the garlic and diced mushrooms to the skillet, cooking until the mushrooms are softened, about 5 minutes.
  4. Stir in the Arborio rice, cooking for 2 minutes until the rice is slightly translucent.
  5. Begin adding the warm vegetable broth one ladle at a time, stirring frequently and allowing the rice to absorb the liquid before adding more. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
  6. Once the rice is cooked, stir in the grated Parmesan cheese, salt, pepper, and chopped parsley. Remove from heat and let it cool for 10 minutes.
  7. Preheat the oven to 200°C (400°F).
  8. Once the risotto mixture has cooled slightly, mix in the egg until well combined.
  9. Form the risotto mixture into small balls (about 2.5 cm in diameter) and roll each ball in breadcrumbs to coat.
  10. Place the risotto bites on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden brown and crispy.
