Ingredients

  • Quinoa - 1 cup
  • Water - 2 cups

  • Mushrooms (cremini or button) - 200 grams, sliced
  • Spinach - 100 grams, fresh
  • Bell pepper (red or yellow) - 1 medium, diced
  • Soy sauce - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Avocado - 1 medium, sliced
  • Chives - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
  2. While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sliced mushrooms and diced bell pepper to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are browned and the bell pepper is tender.
  4. Stir in the fresh spinach and cook for an additional 2-3 minutes until the spinach is wilted. Season the mixture with soy sauce, lemon juice, salt, and black pepper. Mix well to combine.
  5. Once the quinoa is cooked, fluff it with a fork and divide it between two bowls. Top each bowl with the sautéed mushroom and vegetable mixture.
