- Mushrooms (cremini or button) - 200 grams, sliced
- Spinach - 100 grams, fresh
- Bell pepper (red or yellow) - 1 medium, diced
- Soy sauce - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Avocado - 1 medium, sliced
- Chives - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
- While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced mushrooms and diced bell pepper to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are browned and the bell pepper is tender.
- Stir in the fresh spinach and cook for an additional 2-3 minutes until the spinach is wilted. Season the mixture with soy sauce, lemon juice, salt, and black pepper. Mix well to combine.
- Once the quinoa is cooked, fluff it with a fork and divide it between two bowls. Top each bowl with the sautéed mushroom and vegetable mixture.
- Garnish with sliced avocado and chopped chives before serving.
